Ingredients:
- 1 cup all-natural creamy peanut butter
- 1/2 cup coconut palm sugar
- 1/2 cup chocolate whey protein powder
- 2 large eggs
- 1/3 cup mini chocolate chips(optional)
Instructions:
- Preheat oven to 350° and spray a baking sheet with cooking spray.
- Place all ingredients in a bowl and mix to combine. Note that the consistency should be similar to cookie dough. If it is crumbly then the peanut butter isn’t runny enough, so add 1-2 teaspoons of melted coconut oil.
- Roll 2 teaspoons of dough into a ball and flatten between your palms. Since the cookies don’t expand when they cook it’s important to flatten them beforehand.
- If desired, place mini chocolate chips on top of each cookie
- Bake the cookies for 10-12 minutes at 350° degrees Fahrenheit.
- Let the cookies cool for 15 minutes before removing from the pan. If you remove them too soon, they may break in half.
