Powering peanut butter protein cookies

Healthy and sweet protein cookie recipe

Forget peanut butter and jelly. Peanut butter and chocolate is the new power duo. Both healthy and sweet, these cookies are the best of both worlds.

Prep time: 10 minutes

Cook time: 11 minutes

Total time: 21 minutes

Ingredients:

  • 1 cup all-natural creamy peanut butter
  • 1/2 cup coconut palm sugar
  • 1/2 cup chocolate whey protein powder
  • 2 large eggs
  • 1/3 cup mini chocolate chips(optional)

Instructions:

  1.  Preheat oven to 350° and spray a baking sheet with cooking spray.
  2.  Place all ingredients in a bowl and mix to combine. Note that the consistency should be similar to cookie dough. If it is crumbly then the peanut butter isn’t runny enough, so add 1-2 teaspoons of melted coconut oil.
  3. Roll 2 teaspoons of dough into a ball and flatten between your palms. Since the cookies don’t expand when they cook it’s important to flatten them beforehand.
  4. If desired, place mini chocolate chips on top of each cookie
  5. Bake the cookies for 10-12 minutes at 350° degrees Fahrenheit.
  6. Let the cookies cool for 15 minutes before removing from the pan. If you remove them too soon, they may break in half.
