These sweet, chewy cookies melt right in your mouth after coming out of the oven. This large recipe makes nearly four dozen cookies and is perfect for big parties. Not only are they a healthier dessert option, but delicious.

Yields: 36-48 cookies
Ingredients:
- 3/4 cup butter
- 1 cup brown sugar
- 1/2 sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon sea salt
- 2 eggs
- 2 teaspoons ground cinnamon
- 2 cups coach’s ‘steel-cut’ oats
- 3/4 cups pecans, chopped(optional)
- 3/4 dried cranberries(optional)
Instructions:
- Preheat oven to 375°
- Cream butter by using the paddle mixer attachment and mixing on medium speed
- Add both sugars, salt, baking powder, baking sodas, eggs, vanilla, cinnamon and half the flour into a bowl and beat to combine.
- Beat in the remaining flour
- Add oats, pecans and cranberries
- Roll teaspoon sized dough balls and place on an ungreased cookie sheet.
- Bake at 375° degrees Fahrenheit for 12-15 minutes or until edges are golden brown. Once cooked let them cool on a wire rack.
