Oven baked mashed potato cakes

Ingredients: (yields 4)

1 3/4 lbs potatoes, peeled and rinsed

2 eggs

2 tbsp onion, finely chopped

Salt and fresh cracked pepper

1 c ham or bacon, diced

2 tbsp butter

1 tbsp milk

2 tbsp chives, chopped

4 tbsp breadcrumbs

Parchment paper

Circular cookie cutter

Directions:

  1. Place potatoes in boiling salt water until thoroughly cooked
  2. Gently fry onion until translucent and set aside.
  3. In large bowl, combine potatoes, eggs, ham or bacon, onions, butter and chives. Season with salt and pepper. Adjust mixture’s texture with milk if necessary.
  4. Preheat oven to 400° F and line baking sheet with parchment paper.
  5. On baking sheet, using circular cookie cutter, sprinkle breadcrumb layer, then scoop potato mixture to shape cakes—about 1 1/2 inch thick. Press down slightly with back of spatula and finish with another thin breadcrumb layer. Remove ring mold and repeat process.
  6. Bake in oven at 400° F for 10 minutes and serve warm.

Rudolph Cookies

Ingredients:

1 box Devil’s Food Cake Mix

2 eggs

1/3 c oil

Chocolate frosting:

3/4 c butter, softened

1/4 c unsweetened cocoa powder

1 tsp vanilla extract

2 tbsp milk, more if needed

2 c powdered sugar, more if needed

Red and white M&M’s

Nilla Wafers

¼ c melted chocolate

Pretzels

Parchment paper

Cookie directions:

  1. Preheat oven to 350° F and line pans with parchment paper.
  2. Combine cake mix, eggs and oil. Add a little more oil to make thinner.
  3. Make dough balls golf ball size and place on pans, press down.
  4. Bake for 7-9 minutes. Take out and let cool.

Frosting directions:

  1. Beat butter and add cocoa, vanilla and milk.
  2. Slowly add powdered sugar until you’ve reached desired consistency. Add more milk to make thinner.
  3. For reindeer eyes, melt chocolate and use toothpick tip to dot melted chocolate onto two white M&M’s.
  4. Place Nilla wafer and pretzels to assemble frosting cookies. Use frosting to stick on red nose and eyes.
